Beet juice beneficial for the brain
Beet juice increases blood flow in the brain in the elderly, which may protect against dementia (including Alzheimer’s disease) according to a study published in the journal Nitric Oxide: Biology and Chemistry.

Beets contain high concentrations of nitrates which are converted to nitrite during digestion. Previous studies have shown that nitrite, also present in high concentrations in celery, cabbage and other leafy vegetables like spinach, dilated blood vessels in the body. This study shows that they also increase blood flow to the brain.
“There are areas of poorly perfused brain with age, which is regarded as favoring of dementia and cognitive impairment,” the authors write.
Daniel Kim-Shapiro and Gary Miller of Wake Forest University conducted the study with 14 people aged over 70 years. Of magnetic resonance brain images showed, after a diet rich in nitrate, increased blood flow to white matter of frontal lobes are the brain areas most commonly associated with degeneration leading to dementia and other ailments cognitive.
